This is printed on the back of Trader Joe's Gluten Free Rolled Oats, wish I could take credit for it. I could tweak it and say it's mine then I wouldn't be lying, but credit goes to where it's due. Thanks TJ's!
1/4 c butter
3/4 c sugar (I did cut this to 1/2 c)
3/4 c brown sugar
1 1/4 tsp baking soda
2 eggs
1 tsp vanilla
1 c nut butter (I used peanut butter)
3 c TJ's GF Rolled Oats
6 oz. chocolate chips (I used Enjoy Life brand)
1/2 c chopped nuts (optional, I didn't use them)
Cream butter and sugars. Add baking soda, eggs, vanilla and nut butter. Stir in oats, chocolate chips and nuts.
Bake at 350 degrees for 10-12 minutes.
Yield: 48 cookies
If you make bigger cookies, increase baking time to 15-16 minutes. That's what I did. I also scooped them out and shaped them with my hands and pressed them down a bit.
