Gluten Free Bagels
1 c blanched almond flour
1/2 c almond meal
1.5 tsp. baking soda
1/2 c Greek yogurt
4 tbsp. butter
coconut oil spray
Preheat oven to 350 degrees
Spray pan lightly with coconut oil spray
Melt butter on low setting in microwave or in a pan on stove
Measure and whisk together almond flour & meal & baking soda into one bowl
Measure and whisk eggs, yogurt & melted butter into a separate bowl
Pour wet over dry ingredients and combine
Divide mixture into donut pan evenly just to the top of the molds
Cover with toppings
Bake for 20-25 minutes
Let cool completely before removing
Store lightly covered with foil or refrigerate in a container.
Use greek yogurt, not regular, for better consistency.
Use a combination of the almond flour/meal as recommended, again for consistency and texture.
Toppings - use what you like - Everything But the Bagel Seasoning, sesame seeds, raisins, etc.
